Quick Pancakes (GF Lactose Free Low FODMAP)


Quick and easy for the morning, but not glycemic friendly. I eat this with a handful of nuts first to balance the carbs. You could make it more glycemic frinedly by swapping some of the plain flour for ground almonds, but this would also make it more expensive. Makes about 3 or 4 pancakes




1 egg
120 ml lactose free milk (or soya milk)
2 oz flour
Butter to fry (I use lactofree or Pure margarine)
Blueberries
Alpro pouring yoghurt




Put the egg, milk and flour in a blender and blend for 1 min. Meanwhile, heat some butter. Fry the pancakes, turning once, and put on a plate. Add blueberries and pouring yoghurt to taste.
