Puy Lentils GF DF Low GI


This is a really tasty side dish. It is an excellent source of fibre (glycemia friendly) and a good replacement for carborific pasta, potatoes or rice. I normally make some up and serve with grilled fish, chicken or lamb and side veg.


Puy lentils
Mushrooms (about 5)
Garlic
Red wine
Basil leaves
Sun-dried or sunblush tomatoes
Fresh Stock/ water and stock cube
Olive oil 


Chop the mushrooms and fry lightly in a saucepan with a little oil. Crush the garlic and add to the pan. Next, throw in washed puy lentils. Cover with stock (water/stock cube) and a glug of red wine. Bring to the boil and simmer for 5 minutes before adding chopped sun-dried tomatoes and basil leaves. Simmer until most of the liquid has evaporated, stirring occassionally but more towards the end. Serve it up when the lentils are tender.
